Whole 30 toast

It all started when…

It was Tuesday. I needed to honor #toasttuesday but, for some ODD reason, I wasn't feeling bread. I looked in my fruit basket and saw a sweet potato. Naturally, my mouth began to water and I knew I was about to make sweet potato toast. Sweet potatoes are so good for you: good source of vitamin A, vitamin C, vitamin B6, Potassium, Dietary fiber, Phosphorus, & Iron!  

What you need:

1 sweet potato 

1/2 - 1 Avocado

Organic arugula

Hemp seeds (Navitas Organics are my go-to! And, yes, hemp seeds are Whole 30 compliant!)

Other suggested toppings (Whole 30): Mag's Mad Butter, 100% Nut Butter, EVOO, sautéed vegetables, organic free range egg. 

Cooking PRocess:

1. Slice the potato in half (hot-dog way)

2. Pop each slice in the toaster, oven, or toaster oven (If using an oven, 350 degrees F for about 15 minutes each side.)

3. Top the slices with the goods!
